Winter has officially come around for us at Wild & Free, we can't hide from the cold forever! Braving the winter in Cornwall means surfing in freezing waters, wearing a 5.4mm suit, hat, gloves, boots. We often come home with numb hands struggling to get our wetsuits off. It's our favourite time to get busy in the kitchen and make wholesome, hearty meals to keep us going.
We love making soups. Not only is it an incredible way to get your 5 a day, it's also the perfect detox after Christmas, giving the digestive system a little break but still filling our bellies! They are quick, easy, tasty and healthy. What more could you want? We've decided to share with you our three favourite recipes for soups this winter. All you need to do is chop up your ingredients, quickly fry in olive oil, pop them in a pan with boiling water and vegetable stock until soft, blend and voila! Ready to eat. 1. Minty Pea and Potato Soup
Olive Oil , 1 Onion , 800g Potato, 1 Cube Vegetable Stock, 350g Frozen Peas (add in 2mins before blending), Handful of Mint, Salt, Pepper
2. Creamy Carrot and Sweet Potato Soup
Olive Oil, 1 Onion, 3 Carrots, 800g Sweet Potato, 1 Cube Vegetable Stock, Salt , Pepper, Parsley
3. Broccoli and Stilton Soup
Olive Oil, 1 Onion, 1 Celery Stick, 1 Leek, 1 Potato, 1 Head of Broccoli, 140g Stilton, 1 Cube Vegetable Stock
